The Alternate text that you use behind your images has two main functions, firstly it helps to tell any visitors who are running on slow connections and have therefore disabled images from loading what each image should be, but secondly, and more importantly, it allows us to replace empty white space that Google bot can't read, with keyword rich content that Google bot will love.

The important thing is to maximise your keyword densities without overdoing their use. This can be a balancing act, and there are several important points that must be adherred to otherwise your site will be penalised.

You want to add Alternate Text to every image on your page, but limit the volume of words in each. The more concise the better, but you still need to include all your important keywords.
